Caravan Picnic - Easy Vegan Sandwiches

Lunch times are bliss at the caravan when the sun is shining, the sun-cream is slapped on and we’re chilling outside on our pallet stools. Usually you’ll find Darryn with his screwdriver building shelves, seating, raised potting beds and outside bars. Me, I’ll be writing and documenting for Caravan Living.

Darryn will happily cook a full meal for lunch experimenting with nutritious salads but, me, a quick vegan sandwich with vegetable crisps is enough so I can get back out to enjoy the sunshine.

Without inspiration a delicious vegan sandwich can be hard to think of and even harder to encourage children, partners and friends to enjoy. These delicious sandwich fillings give you all the inspiration you need for a quick vegan lunch whether you’re enjoying your caravan life, making the most of some garden time or prepping for a picnic.

The Classic Vegan Sandwich

Falafel
Houmous
Cherry Tomato
Fresh Spinach

Falafel and houmous is an over rated vegan combo but it is easy and most of the time we have these ingredients in the fridge.

The Italian Job

VioLife vegan cheese slices
Sundried Tomato
Green Olive
Vegan Pesto

This classic combo of cheese, tomato and basil is great in a big baguette or a toasted sarni. Simple and delicious but if you are vegan, ensure you get the vegan pesto usually found down the Free From aisle of a supermarket.

The Mexican Taste Sensation

Smashed guacamole
Smokey beans
Vegan Mayo
Diced red onion
Tomato

Mmm, like a burrito in a sarni. Make smokey beans by using cannellini and kidney beans in a bowl slightly smashed with paprika, chilli powder, smoked paprika, cumin, coriander and a squeeze of lime for a zesty punch.

The Not So Fishy Tuna

Chickpea Tuna
Vegan Mayo
Diced red onion
Iceburg lettuce

Make chickpea tuna by pulsing a few capers, a dash of lemon juice, some tamari then add 1 tin of chickpeas and pulse so still chunky. Mix with vegan mayo, salt, pepper and a squidge more lemon juice. Yom yom.

The Vegan Sausage Sandwich

Linda McCartney Sausages
Brown sauce (double check ingredients if vegan)

Simple but delicious. Dry pan fry the sausages till hot and bang in some soft bread with brown sauce. Perfect for lunch, brunch or brekky.
